COOL  DOWN  SWITCH  OPERATION

1. Switch must be in on position for drum rotation during roast cycle.
2. Set timer for dark roast of one pound of green coffee beans approximately (15-20 minutes).  Roast and cool down must be in a well ventilated area.  Overhead exhaust hood or window fan.  Powered exhaust system available as an option.
3. Once roast cycle is complete, heating elements will auto shutoff, drum will continue to rotate for cool down cycle, after 10-15 minutes manually turn off rotisserie motor.  The cool down cycle may be more effective for small batches, 4-8 oz., for larger batches of 1 lb. it may be necessary to remove the drum and dump the beans into a pan for cooling.
4. For rapid cool down of large batches 1-10 pounds a cool down system is recommended for more repeatable roast profiles. http://www.cafecoffees.com/cooldwnbkt.html
